White Chocolate & Cranberry Homemade Cookies

I once saw stand up comedienne Fiona O’Loughlin  jokingly tell the story of being at home while her kids and husband were at school and work. In order to appear like she’d been busy all day, she told us that at 4pm in the afternoon she’d throw onions on a pan. She assured us all that this act would 1. have everyone assume that she’d been very busy all day and 2. that the aroma of cooked onions was so comforting that everyone was automatically calmed. I figured all jokes aside, with 5 kids she’d  know how to calm a house!

I tell the story not because we need to look busy but rather because there are some things that we cook that really do bring a sense of calm and comfort to the whole family. The art and process of baking cookies is indeed something that seems to restore a new order to a day . The delicious aroma filling the house and everyone just seems to get on with things.

WHITE CHOCOLATE COOKIES

It’s white chocolate week here at Dello Mano. I have to admit up front that, white chocolate is a little on the too sweet side for me. White chocolate combined however with the sparky tartness of dried cranberries changes everything . White chocolate is taken to a new place and  a world of its own. So today, here is the White Chocolate and Cranberry cookie recipe we baked at home last weekend.

Assemble together the ingredients

 

White chocolate and cranberry cookie mix
Form white chocolate and cranberry cookies with an ice cream scoop
Continue to roll out cookies onto lined baking tray
Freshly baked white chocolate and cranberry homemade cookies

Those crispy sides are absolutely delicious!

DRY INGREDIENTS

75g caster sugar

80g brown sugar

110g plain flour

1/2 teaspoon baking powder

1/8 teaspoon of bicarbonate of soda

90g quick oats

150g dried cranberries

180g white chocolate chips

WET INGREDIENTS

125g melted butter

1 lightly beaten egg

1 teaspoon of vanilla

INSTRUCTIONS

PREHEAT OEN TO 180 c

1. MIX ALL THE DRY INGREDIENTS  TOGETHER

2. ADD THE WET INGREDIENTS TO THE DRY AND GENTLY MIX

3. PLACE 12 SPOONFULLS OF COOKIE MIX ONTO A LINED BAKING TRAY – LEAVE THE BALLS ROUNDED WITH THE SLIGHTEST OF TAPS

4/ BAKE FOR 8-10 MINUTES UNTIL GOLDEN

5. REMOVE FROM THE OVEN AND COOL

Enjoy the little luxury of that delicious aroma filling the house.
